Ingredients

  1. Egg Yolks – 4 pcs
  2. Granulated sugar or Brown Sugar – ½ Cup
  3. Milk – 1 and ½ Cup
  4. Heavy cream – 1 Cup
  5. Vanilla extract or vanilla bean paste – 2 teaspoons
  6. pinch salt

Equipment

  1. Mixing bowls
  2. Whisk
  3. Measuring cups and spoons
  4. Medium saucepan
  5. Thermometer-Instant-read (Optional)
  6. Ice cream machine
  7. Plastic wrap

Directions

Mix yolks and sugar together

place the egg yolks and sugar in a medium-size bowl and whisk until combined or mix well. The mixture will look like dark yellow and very thick (At First) then it will be smooth and lemon-yellow color.

Warm the milk

Place the milk in a saucepan and give medium heat. Then add Vanilla extract or vanilla bean paste and heavy cream. Don’t forget to add a pinch of salt (Taste to make sure the vanilla flavor is to your liking.) Remove from heat, when the milk will be simmer.

Mix egg, sugar, and milk

Now, slowly pour the hot milk into the egg-sugar mixture. Then slowly mix it and again pour the tempered mixture into the saucepan.

Cook the ice cream base

Return the saucepan to low heat and Stir the mixture slowly and constantly (Do not allow it to come to a boil). Keep cooking until the base has thickened or until it reaches 165º F.

Ice water bath

Now, leave the ice cream base over the ice water until it gets cold (About 15-20 minutes). Then cover the bowl with plastic wrap and refrigerate for at least 3 hours. (Overnight if possible because it needs to be really cold).

Use ice Cream maker

Remove from refrigerate and follow the instruction of your ice cream maker. In most ice cream makers it takes about 20 minutes to make the soft ice cream.

Make ice cream solid

Now, pour the soft ice cream into an ice container from your machine. Then freeze overnight (At least 4 hours).
